Recipe: Creamy Coconut Green Smoothie


In my quest to stop eating leftovers for breakfast, i'm falling deeper and deeper down the smoothie hole. (That sounds kind of weird but I'm just going to leave it there.) 

  • 1 cup coconut milk
  • 1/2  medium steamed sweet potato (about a half cup cubed)
  • 1/2 cup steamed carrots
  • 1 cup spinach
  • 1 tablespoon almond butter

 

Put all ingredients into blender and blend until smooth.  This smoothie is creamy and tasty, I was pleasantly surprised the first time I made it.   I'm also thinking it would make a good soup with just a few added herbs and a pinch of salt.  I'll be working on it.

 

Now, instead of pork Marsala and toast, breakfast looks like this:
