Recipe: Green Monster Light Smoothie

I am happy to report that I have been on my  morning smoothie routine for well over two months. I have cycled through several combinations of fruits and veggies and ninety-eight percent of my concoctions were yummy. My biggest failure was with a green smoothie where I was a little heavy handed with the kale.  I haven't gone back to the green smoothie until now because I did not like chugging my first green smoothie, (it tasted like grass with blended anchovies.) I decided to go lighter and gradually up the "greeness" once my palate adjusts to the taste.`

Green Monster Light Recipe:

  • 1 Medium Cucumber
  • 1 Medium Granny Smith Apple
  • 1/2 Medium Lemon
  • Ginger (enough to yield about 2 tablespoons of juice)
  • 1/2 cup Almond Milk
  • 2 Cups Fresh Spinach

I used pure elbow grease and grated and juiced the cucumber, apple and ginger. I then added the juice, lemon, almond milk and spinach to the blender. It yielded a little under 8 ounces and was  light and refreshing. (I also think it might have opened up my sinuses just a bit but will make it a couple more times before I start throwing out random clainms)  Anyway, I used  Myfitnesspal app to record this recipe and it came in at 106 calories - this is why I called it 'Green Monster Light.'  See the Nutrition Facts Below: (Please note this is approximate.)
